Postharvest technology of citrus fruits - ScienceDirect
The citrus fruit rind (pericarp), being anatomically isolated from the juice vesicles of the pulp and with leaf-like properties, is the source of moisture loss via transpiration and evaporation (Kaufmann, 1970). In terms of resistance to moisture loss, the citrus fruit has a thin film of epicuticular waxes on the surface of their cutin matrix.
